A turning peel is the single most useful accessory you can add to your pizza oven setup. Once you use one, you cannot imagine cooking without it. The long, thin head lets you get under the pizza and rotate it 90 degrees mid-cook without touching the stone or dragging the base. This is how you avoid burnt edges on one side while the other stays pale.

You need to clean the pizza stone between cooks and after each session. The handle is long enough to reach the back of any portable oven without burning your hand.

A rocker cutter is faster and more satisfying to use than a wheel cutter. One motion cuts across the whole pizza cleanly. 6. Ooni 12″ Perforated Pizza Peel – Best Launch Peel

The turning peel gets all the attention, but you also need a launch peel – the larger flat peel you use to slide the pizza into the oven in the first place. The Ooni 12″ perforated peel is my go-to. The holes reduce sticking by allowing airflow as you build the pizza on it, and the long handle keeps your hands well away from the heat.

The head is sized right for a 12″ pizza – big enough to launch confidently without being unwieldy. I use a light dusting of semolina before loading the dough, and it slides off cleanly every time. If you have a larger oven like the Ooni Karu 16 or Gozney Dome, Ooni also do a 14″ version.

7. Infrared Thermometer – Best for Checking Stone Temperature

One of the most common mistakes with pizza ovens is launching before the stone is hot enough. You cannot tell by eye – the floor looks the same at 300C as it does at 450C. An infrared thermometer fixes this. Point it at the stone, pull the trigger, and you get an instant reading.

For Neapolitan-style pizza you want the stone at 400-450C before launching. For New York style, 300-350C is fine. A good infrared thermometer costs about $15 and is one of the most-used tools in my kit – I use it for the stone, the dome, and even my BBQ. Well worth it. 8. Pizza Dough Proofing Trays – Best for Making Dough From Scratch

If you are making pizza dough at home, proper proofing trays make a real difference. A lidded tray sized for dough balls creates the sealed environment that stops a dry skin forming on the surface – something that makes the dough harder to stretch when you come to open it.

Stack them in the fridge for 24-48 hour cold proofs. They are dishwasher safe and durable enough to last years with regular use. If you are cooking pizza regularly, this is a worthwhile addition to the kit.

9. Heat-Resistant Gloves – Best for Safe Handling

Pizza ovens run at 400-500C. Standard kitchen oven gloves are not built for this. Proper high-heat gloves rated to 500C are a must, especially ones with a long sleeve section that protects your forearms as well as your hands – useful when reaching in to adjust the pizza or reposition wood in a multi-fuel oven.

Look for gloves that are flexible enough to actually do things in. A pair of these should live next to your oven whenever it is in use. This is one area where skimping is not worth it.

Caputo 00 Pizzeria flour for Neapolitan pizza

10. Caputo 00 Flour – Best Pizza Flour

Strictly speaking this is an ingredient, but it makes such a difference that it belongs in any serious accessories list. Caputo 00 Pizzeria flour (the blue bag) is the standard for Neapolitan dough. The fine grind and lower gluten content gives you soft, extensible dough that stretches without snapping and develops a light, airy crust with good char in a high-heat oven.

Supermarket bread flour works in a pinch, but if you want proper results from a proper pizza oven, use proper flour. A 1kg bag costs about $3 and lasts several sessions. You can also get 5kg bags on Amazon for regular use.

What to look for when buying pizza oven accessories

Peel material: Metal peels (aluminum or stainless) are better for launching because dough slides off more easily, especially when perforated. Wooden peels are better for serving. Some people build the pizza on a wooden peel and slide it onto a metal peel to launch – this works well once you have the technique.

Handle length: For portable ovens like the Ooni Koda 12 or Gozney Arc, a shorter handle (around 60cm total) is easier to manage. For larger ovens with a deeper cooking chamber, you want something longer. Ooni’s own peels are sized correctly for their ovens.

Brand compatibility: Most accessories are universal – a pizza peel works with any oven. The exception is covers and carry bags, which are usually model-specific. Check compatibility before buying.

Quality vs price: For peels and thermometers, mid-range products work just as well as expensive ones. Where it is worth spending more is on the turning peel – cheap ones flex and are harder to control at high speed inside a hot oven.

What about a pizza stone?
